Add the remaining olive oil to the casserole pan, then the mushrooms, creamed garlic and shallots, tossing together gently over a medium-high heat until pale golden at the edges. Generously season with salt and pepper, add the water or stock, then give one final stir and bring to a simmer. Cover with a lid and simmer gently for 20-30 minutes or until the vegetables are all soft.
